Makes 2 cups

Ingredients

  • 1 pound tiny new potatoes, quartered
  • ½ cup plain Greek-style yogurt
  • ¼ cup light mayonnaise
  • 1 tablespoon zing (such as Dijon mustard, wasabi sauce, or finely chopped red onion)
  • ¼ teaspoon each salt and black pepper
  • 2 cups prepared vegetables (such as steamed cauliflower rice, cooled; chopped red bell peppers; or chopped fresh kale
  • ¼ cup finely chopped fresh herbs (such as parsley, Thai basil, or oregano)

Directions

  1. Put potatoes in a large saucepan with water to cover. Bring to a boil and cook, covered, until tender, 15 to 20 minutes. Drain; rinse with cold water. Let potatoes cool.
  2. Stir together yogurt, mayonnaise, zing, salt, and pepper in a large bowl. Stir in vegetable and fresh herb. Add cooled potatoes; toss gently to coat.
  3. Chill, covered, at least 1 hour or up to 24 hours.
