Ingredients

Original recipe (1X) yields 5 (1/4 cup servings) servings

  • 3 tablespoons butter

  • 1/4 cup chopped onion

  • 1/4 cup chopped celery

  • 1/4 cup chopped green bell pepper

  • 3 tablespoons flour

  • 2 cups low-sodium chicken broth

  • 1 teaspoon Cajun-style seasoning

  • 2 dashes hot sauce (such as Tabasco), or more to taste

Directions

  1. Melt butter in a medium saucepan over medium-low heat. Add onion, celery, and bell pepper; cook, stirring occasionally, until softened, about 8 minutes.

  2. Whisk in flour. Cook, whisking constantly, until pale golden in color with a lightly nutty aroma, 3 to 4 minutes.

  3. Whisk in broth. Bring mixture to a simmer; simmer, uncovered, stirring occasionally, until reduced by half (to about 1 1/4 cups) and sauce coats the back of a spoon and holds a line when you draw a finger through it, about 30 minutes. Whisk in Cajun seasoning and hot sauce.
