I didn't think the flavors merged to make a cohesive dish ... tasted like chicken with cream cheese inside. The wonky bacon just wasn't working for me. Tried it again by omitting the bacon and the green onions then added feta cheese with sauteed onions and minced garlic which bumped up the cream cheese filling flavor however the outside chicken breast suffered from lack of flavor. Next time, I might try rolling in bread crumbs or possibly marinading the chicken breast to give it more flavor. I'm pretty sure that it's caused from the peppers but it could be a combination of the peppers and the beans. Secondly, I would add a little paprika or powdered chipotle to just give it a "little something". Unfortunately, the sauce didn't thicken up for me so I tempered in a beaten egg into it just to be on the safe side. I had about a cup of tomatillo sauce left over from a previous meal, so I put a thin layer on the bottom of the pan before placing the rolled tortillas on top. After I poured the sauce over the enchiladas I drizzled the remainder of the tomatillo sauce -- it was a medium heat so it gave a nice zing with the white sauce. Thank you for sharing this recipe! I admit I have a hard time following recipes, I usually change things as I go a long depending on my taste at the time. I incorporated part of the sauteed onions/garlic mixture, sour cream, butter and preshredded Mexican Blend cheese into the mash potatoes to make it like a pierogi. I cooked the the bacon separate (but used the grease for the onions and garlic) so I could crumble it between layers but then I forgot to add it to the dish when I was putting it together. I'm glad I didn't put it in since it didn't need it in the end as this was very rich. I used paprika, the remainder of the sauteed onions/garlic and some shredded Pepper Jack cheese in between layers, and on top too. They don't spread out when baking so you need to kind of press them down a bit. I didn't have walnuts on hand so I used almond slices. The only thing negative (and this is a slight negative due to personal taste) is that the white chocolate was a too sweet for my taste. Next time I will put less chips in and probably use the mini size ones since I make my cookies more on the small side.
