We don't eat beef so I used ground turkey. Since we are two adults, in addition to the package of chili mix, I added a tsp of chili mix and a tsp of cajun seasoning. I added a minced garlic as well. Delicious!

So I made this with GLUTEN-FREE flour. I substituted 1/2 cup applesauce with 1/2 oil for the 1 cup oil. I went skimpy on the brown sugar since I didn't have as much as it called for. I used almond milk instead of coconut milk, and it's quite sweet without coconut milk. If you're going gluten free, I recommend Bob's Red Mill all-purpose flower mix. WATCH your time - my loaves were done, using a convection over, at 50, not 75 minutes. Gluten-free flour was probably the reason for that. As others have said, plenty sweet, no coconuts for me.
