Super easy, but elevated breakfast or brunch dish with plenty of room to embellish! I feel brioche works best and dusted each slide with a cinnamon sugar mix. To raise the flavor profile, I added 3 tablespoons or orange juice to the dip mixture and, if you want a bit more of a crispy bite, 2-3 mins in a toaster over after pan frying creates an almost caramelized crust ;)

Breakfast Burritos Recipe.

Great base recipe! I prefer my eggs scrambled, so cooked them that way with a bit of butter, salt, and pepper. To keep things easy I microwaved the bacon and the tortillas (separately) and didn't fry the refried beans. I added Mexican cheese, salsa, and jalapeños to top, layered all the ingredients in the tortilla, wrapped and microwaved one more time until the cheese melted. Need to play with the proportions and size of the tortillas to make sure everything fits and can be folded nicely. Super tasty breakfast and easy to make several, which can be wrapped in foil and enjoyed for a quick breakfast later in the week!
