Subbed half amount of chipotle chili powder for the aji amarillo paste and it was too spicy. Needed more chicken and more water. Will try again when i get the Aji paste.

We liked this. Made as directed, except used boneless chicken thighs. Served over bulgur cooked in chicken broth.

Exotic Brinjal (Spicy Eggplant) Recipe.

This was so good. I didn’t have kalanji, so used 1/4 dried minced onion to sub. Also doubled the tomato purée and added about a tablespoon of tomato paste. I’m happy I found this to expand my eggplant and Indian repertoire.

California/Mexican Cauliflower Rice with Avocado and Kale Recipe.

This was surprisingly good. A a nice alternative to the beans and rice I usually serve with Mexican food. Instead of a can of chiles, I diced up a jalapeño and tossed it in with the zucchini. Also sprinkled some chipotle chili powder and Adobe seasoning in the pan. Omitted the eggs. Used regular kale bc that’s what I had. I will make this again.

Slow Cooker Hamburger Soup with Macaroni.

It was pretty thick, like a stew. We liked it. Family ate it up, so no soggy macaroni leftovers. Flavor was actually pretty good even with not very many spices. A warm hearty meal to come home to in the winter.

Banana Beer Bread Recipe.

I made this as written, but it was too moist on the inside like others had noted, but the taste was so good I wanted to make it again. On the second try, I only used 75% of the sugar, 50% of the dates, about 2/3 of the nuts, and no oil. It was so much better. Loved that super gingery taste. You can’t taste the banana at all, but I just view it as an oil replacer. I always have frozen banana and ginger on hand, so easy to make anytime. Made it vegan using Bob’s red Mill brand egg replacer with excellent results.

Broccoli Garlic Angel Hair Pasta Recipe.

I used thin spaghetti rather than angel hair and only used 2 cups of broth. Looks so basic, but is surprisingly flavorful. It’s nice and garlicky and spicy. Family loved it.

Roasted Balsamic Chicken with Baby Tomatoes Recipe.
It tasted good but nothing spectacular. It did have a different taste than other dishes I make, so it was a nice change of pace. The balsamic flavor was strong. Because it was so easy, I’ll probably make it again sometime.
