I ended up adding a whole red and yellow bell pepper, a cup of corn, and 7 stalks of celery. I wanted it to have more vegetables. I topped it with some salsa and it was super good!
Love this!! I changed it up a bit; I used 1/2 onion and 1 leek, shrimp and less chicken (ran out of chicken), and I had no basil or lime. You can't really go wrong with quinoa and tasty veggies.
