This is the second one that I baked within six hours, as the first one, minus curd & meringue slid off the island when I bumped it. Cheesecake deux has a circus themed meringue for obvious reasons.

I baked this cake to take to a gathering and it was an instant delicious hit of the party. So much so, there were zero pieces remaining to bring home. So, I had to bake another one for my family. I made a few recipe adjustments by using 2% milk in the cake recipe instead of water, as it makes the cake a bit more richer in flavor and texture. I used pecans instead of walnuts. And I used Bacardi’s Gold Rum instead of dark rum.

I make this dish every time we have a gathering of folks. It is always the hot of the party. I serve it with Fritos Scoops though.
