Submitted by terriyaki2 Published on July 10, 2010 Save Rate Print Share Prep Time: 15 mins Cook Time: 10 mins Total Time: 1 mins Servings: 3 Cook Mode (Keep screen awake) Ingredients 2 large chicken thighs sauteed in olive oil until cooked through 1/2 cup seedless red grapes, cut in half 3 tablespoons finely choopped red or green onion 1/4 cup finely chopped celery 3 tablespoons dried cranberries 2 tablespoons golden raisins 2 tablespoons minced parsley 1/2 cup mayonaise 2 tablespoons sliced almonds or sunflowers seeds Sprouts or lettuce Directions Cook the chicken thighs, cool and chop into very small pieces. In a large bowl, combine chicken, grapes, onion, celery, cranberries, raisins and mayonaise. Stir until well combined. Cover and chill for at least one hour. Add nuts to the chicken mixture and serve on your choice of breads with sprouts or lettuce.. Cook’s Note Can substitute chicken breast for the thighs. I Made It Print
