I might have liked it better if I didn't use the bacon or cooked the bacon first and then chopped it up for the soup. The bacon stayed really chewy and that just grossed me out. Probably won't make it again.
Delicious! I'm not a fan of eggplant and I received one in my weekly farm basket. I was convince that I wouldn't like this recipe and I would end up giving it away to the neighbors, but much to my surprise it was delicious. I did remove the skin from the eggplant and I added a little more spice to turn up the heat. I will make again if I ever end up with an eggplant that needs cooked.
Make sure you use a deep dish pie crust or you will have extra egg mixture. I ended up throwing out the pie crust and putting the egg mixture over crescent roll dough in an 8x8 baking dish.
Very good. There is an error in the recipe, though. It calls for 1 (3 oz) package of cream cheese and it should be 8 oz. Almost too much frosting...and I love frosting! Next time I make it I'll make smaller rolls and use 1/2 the frosting. Great way to use squash!

Very good. I will make it again. However, I will make smaller rolls. Splitting the dough into 12 made gigantic rolls! Maybe I let the dough rise too much.
