Super-Delicious Zuppa Toscana.
Love this soup and especially that it can be made start to finish in about an hour. I use spicy italian sausage and add other veggies (carrots, celery, etc.) One of our favorites!!

Stir-Fry Chicken and Broccoli Recipe.
Wonderful...and added more veggies....mushrooms, carrots and water chestnuts. Also added about 1.5 Tblspn of brown sugar and a generous sprinkle of pepper flakes. It was perfect with just a touch of heat. Will make it again!!

Poblano Chile Enchiladas

Heated my tortillas over my gas stove flame. Used rotisserie chicken, substituted Greek yogurt for sour cream, added cumin, Sazón Complete seasoning, 2 cilantro bouillon cubes, cayenne pepper and lime juice to my sauce. Covered the enchiladas with Chahuahua cheese...Great use of garden-fesh poblano peppers. Wonderful!!!
