February 2025 Might try again Had to do this recipe a little different as I'm cooking for 1 and had bnls/sknls chicken thighs that were already lemon pepper in store (4). For the recipe I used the juice of 2 lemons, 2/3rds cup olive oil divided, petite gold potatoes halved. After the suggested cooking time potatoes were perfect with a little color, chicken was done but needed more color. Instead of finishing in broiler, heated up a skillet and finished on stove top. While chicken and potatoes were browning on medium high, used the half of the chicken broth to de glaze pan that was in oven, poured over the chicken and potatoes and let thicken a little bit. Plated the chicken split into containers. It was hard to resist eating the potatoes! I'd recommend doubling the amount of lemon juice and maybe marinate the chicken and potatoes a little bit before throwing in the oven to get more lemon taste.
