My grocer was out of spinach so did not use… also was out of scallions so I used a banana shallot… I used manicotti shells instead of making crepes ( because I’m a coward:-)the dish was delicious and I will be making again… Thank You:-)

This is EXACTLY how my mom made it when I was growing up, right down to the waxed paper between the crepes. Going on the agenda for my husbands birthday later this month [although he’d prefer it sans spinach]. I’m sooo excited to make this for him
We live at 1200 above sea level so I am not sure if that is why I needed to add a 1/2 cup more flour to the recipe in order for it to work in the cookie press. Tasty dough. Made the icing and sugared them. Will experiment with lemon or orange zest and perhaps shaved chocolate and top with chocolate sprinkles next time!
I made these just as written except I doubled the recipe. Put a slice of bacon that was precooked on the electric griddle and carefully poured a 1/4 cup of batter over the slice to cover. Served with local maple syrup aged in a bourbon cask. Yummy!
