I compared a lit of fish dip recipes and they were mostly the same. I like this one because it had the Old Bay and hot sauce. I doubled the amount of Old Bay and hot sauce. I smoke a large side of Mahi Mahi and it worked out great, everyone loved it.
I have made porchetta before using pork loin and stuffing with sausage. This was my first with a pork tenderloin. It was a great recipe and the bacon wrap just made the meat so juicy and tender. I made a little more spice mixture than the recipe and would suggest doubling spice mixture so you ha e plenty to run on the outside of the tenderloin.
Made these last night and they were great I had a couple of poblano peppers that I needed to use, but going forward for ease of prep, I will some roasted poblano pepper strips that I get at grocery. Save a lot of prep time. I also used fancy shredded MJ Cheese instead of cubing block cheese.
I made the sauce in my Ninja Hot and Cold Blender using my enchilada sauce recipe adjusted to the spices call for in this recipe.
I think using this process, I can turn this out for regular weekly dinner in about 30 min.
Great idea to sandwich the peppers and cheese between basically egg omelettes.

Very good recipe, but read the comments. I added a red pepper and some celery I had in the fridge. I used three bags of frozen cauliflower florets and it worked great. Just make sure you roast them really well. I put the garlic cloves on the sheet pan with the cauliflower and added salt, white pepper and cumin. I also added cumin to the onions as I cooked them in the soup pot. I used 1/2 chicken stock and 1/2 water. The finished product was rich in flavor with a nice texture.
I know there are already hundreds of 5 star reviews, but I made this with a little twist. I just got home from and RV trip to New Mexico and bought a case of Hatch Chiles whole I NM. I roasted and chopped up 5 hatch chiles in lieu of the jalapeño and added those to the onions. I followed the recipe the rest of the way. Just outstanding. Best chicken enchiladas I have every tasted. The DW was also impressed and I am sure this will be a regular around the house.
