Skillet-Fried Sweet Potato Turkey Meatloaf by Mama

This is a new twist on traditional meatloaf, in that it is pan-fried with a Panko bread crumb coating for a special treat. We all like it a lot; hope you do, too!

Ingredients

  • 3 baked sweet potatoes, skinned and mashed

  • 2 eggs, beaten

  • 1.5 lbs ground turkey, cooked

  • 1 tbsp dried parsley, 1 tsp thyme

  • 1 cup Panko bread crumbs

  • Canola oil for frying

Directions

  1. Combine all ingredients in a large bowl and mix with hands.

  2. In a large skillet, heat Canola oil to 350 degrees. Add bread crumbs to cover skillet bottom and immediately place mixture on top, pressing down. Top with rest of breadcrumbs.

  3. Fry until the bottom is golden-brown, then flip in sections and fry other side.

  4. Enjoy!
