Made this with fish but I think it would be better with the originally intended pork. I used a whole poblano, red and cubanelle pepper.

This was a decent coffee cake but I feel like there are lots of other recipes out there that are better. I used brown sugar for the topping and I will say this was very easy to put together. Definitely use 3-4 cups of fruit.

I used a different batter recipe but one that was very similar. While I did like the cheese in here I don't really think it added to the whole combo and next time I will omit it to see if I like that better. The basil was good and I need to do more black pepper.

I thought this was going to be too much but it actually was milder and less flavorful than I expected. Love the method of soaking the chicken, I did it by combining a spoon of Greek yogurt and milk. The chicken was very tender. Need to think of something to do to punch up the sauce a bit.

I used a shallow ceramic pie plate and it was perfect, didn't stick at all. No need for all the springform gymnastics. Only had a cup of ricotta so added half a cup of greek yogurt but I'm excited to try it with full ricotta. Very cheesy but light - delicious.

I think I'll increase the marinade by half next time and really dredge the fish in it before I mix with the other ingredients. Used half gold and half sweet potatoes and red wine vinegar as I didn't have anything else. Delicious.
