This was absolutely delicious. I used fresh cubed sweet potatoes and baked for over an hour...added some extra orange juice (used the juice from one orange) and cut the sugar back to about 2/3 cup and it was still plenty sweet. Love it!!!
This recipe is easy, not too time consuming, and tastes delicious. I use all fresh herbs rather than the dried for extra flavor. Will be using this for all of my eggplant this year!
These muffins are great as is. I'm always looking for ways to healthify things, however, so for this recipe I cut the sugar to 1/3 cup, used 1/2 cup of unsweetened applesauce instead of the butter, used 1 cup of whole wheat flour instead of all-purpose, and added 3 teaspoons of wheat bran. I brush butter lightly on top at the end and then dip in the sugar/cinnamon mixture.

Excellent recipe...very easy to make and my kids will even eat it! I substitute all the margarine for an equal amount of applesauce to make it healthier and use half the sugar the recipe calls for. It is delicious!
Easy, tasty and healthy. You can't beat that! LOVE this quinoa recipe and have taken it to parties where it was a huge hit!
