I was nervous about this recipe, the boyfriend and I prefer our meat on the rare side. I seasoned it with salt, pepper, and rubbed some garlic cloves on the meat. My roast was 2.5 pounds...I cooked (fat side up) it 18 minutes at 475 (after preheating to 500). Because we were short on time, I lowered the temp to 175 and left it in for 40 minutes, took it out of the oven and let it sit for 20 minutes, sliced it thin and it was perfect! Will make this again for sure!

As a Shrimp Scampi recipe, this isn't a good one. Not enough garlic, no white wine, lacking flavor. As a shrimp recipe, it's ok.

A little bland for my taste, so I added some of my own seasonings. I also added some shredded mozzarella right at the end of cooking and served it over rice. Easy, filling, and quick!
