Vegan Zucchini Bread Recipe.
A very good zucchini bread. I was out of eggs so I looked up a vegan recipe and this one stuck out at me so I made it. I did a few alterations, I sucked some raisins in hot water and added those plus some walnuts. Next time I make it I’m going to try and cut the oil down and add more applesauce. I also don’t have arrowroot on hand so I left that out. It’s a hit with our whole household.

Fried Cabbage with Bacon and Garlic Recipe.
We are vegetarian so I added meatless breakfast strips instead of the bacon and yummy yummy .. no left overs.

Mediterranean Stuffed Zucchini.
This was super yummy!! I forgot pine nuts at the store so just left them out. Our room mate is vegan so divided the recipe in half, put griller crumbles in her half and used Daiya mozzarella cheese for the top. I felt more spices were in order so added a tiny bit of fennel, fresh rosemary & thyme. Definitely keeping this in our favorites!

Glazed Yeast Doughnuts Recipe.
Very easy to make. They were heavy and had the consistency of a cake doughnut. They were tasty, but I was expecting a lighter doughnut since it was a yeast raised recipe.

Carrot Cake XI
I added 1/2 a 20 oz can of crushed pineapple and twice the walnuts. I frosted with a cooked brown sugar frosting.... Yummy!! Very moist and full of flavor. A keeper.
