This was little more breakfasty tasting than I was expecting, but not bad. It’s a little bland, so could use some garlic or other preferable spices. Worth a try because I needed to use ingredients on hand, probably won’t make again. It was interesting.

Roasted Balsamic Chicken with Baby Tomatoes Recipe.
I made this today and it was delicious! The chicken marinated overnight. The only thing I did differently was add some sliced tomatoes and slabs of mozzarella and basil on top of the chicken during the last 10-15 minutes. I was a little concerned that the balsamic would burn while baking, but it actually turned out really good (just the stuff along the sides of the dish burned a bit). I put the chicken over some penne pasta and drizzled the sauce all over it, very good! I will definitely be making this again!
