I didn't have bread crumbs so I crushed standard soup oyster crackers. I used 3 teaspoons of Huy Fong chili garlic sauce as my hot sauce. I used chuck ground beef. (80% muscle/20% fat) REVIEW: The meatballs were amazing. I tried one (or four, don't judge) about 3 minutes out of the oven and they were amazing. I expected them to not have much structural rigidity, but I was pleasantly surprised at how sturdy they were on their own. The texture is great and tasting the garlic and red chili flakes together really completed the experience. I made mine to be spicy, which is why I added the 3 teaspoons of garlic chili sauce. I really loved how the sauce interacted with the flavors (no vinegar-y taste, added heat and tang), but at times it was overpowering. I if you were to use this sauce I would recommend only 1 teaspoon. Even if you like it spicy, it pays off to dial it back for the sake of retaining the garlic/herb flavor.
