Chicken Casserole Supreme

This is a different take on a chicken and dried beef casserole that my mother made. Using cured country ham brings a unique flavor profile. Serve with noodles or rice.

Ingredients

  • 4 to 6 boneless chicken breasts

  • 1/4 lb country ham sliced thin

  • 1 can Cream of Mushroom or Cream of Chicken soup

  • 1/2 cup sour cream

  • Black pepper to taste

  • Sliced mushrooms (optional)

Directions

  1. Preheat oven to 350 degrees.

  2. Place chicken breasts in a prepared casserole and top with the country ham slices.

  3. Mix soup, sour cream, black pepper, and sliced mushrooms (if using) and spoon over chicken and ham.

  4. Cover tightly with aluminum foil and bake at 350 for 30 minutes or until chicken is done at 165 degrees. Let rest about 5 minutes.

Cook’s Note

Tip

  • Using uniform size chicken breasts helps assure they are all done at the same time. The ham is salty so no additional salt is necessary. The recipe calls for uncooked ham but leftover baked country works well, too.
