My family thoroughly enjoyed this recipe. I added chopped onion and mushroom to stuffing - sauté with garlic before adding to mixture. I precooked the bacon halfway in the microwave to cut down on the grease, and ensure it was crispy. I also added 2 tsp olive oil, 2 tsp lemon juice and 1 tsp oregano to drizzle over the chicken prior to baking. I only had thin sliced chicken breasts on hand, so I layered the stuffing between two slices, and baked on a cooling rack placed on a foil lined baking sheet to prevent the chicken from sitting in the drippings. Served with a side of mashed potatoes. Very tasty!
