I used the "open" method. I added some chopped fresh basil to the coating of the eggplant plus some black pepper on the goat's cheese before melting it. My family really enjoyed it!
Oh my! Something told me to double the recipie to make more... I used whole wheat flour and replaced one cup (of the 4 since it's doubled, right?) with oat bran. I also added cinnamon and vanilla extract and YUM!
