I made it with a few additional ingredients: 1 can chili with beans, 1 can RanchStyle beans with jalapenos (removed/set aside for hubby), and more seasoning (cumin, Mex-all spice). PS. I didn't drain the beans nor the corn, etc. (I rarely drain cans.)
marsala wine substitute--½ cup chicken stock, 1 T of balsamic vinegar, and one tsp sugar. Mix into your recipe exactly the same way you would add the marsala.SERVE WITH Tuscan white beans--For quick version, use canned beans.
I was impressed how well this turned out in the crockpot. However, I cut the backbone out and browned both sides in a cast-iron skillet before placing in the crockpot. I had 3 large sweet potatoes that I placed on the bottom to keep the chicken from sitting on the bottom~ very tasty!
I made it, but used regular canned diced tomatoes instead and added Louisiana Hot Sauce (apprx 1t.) to taste. My hubby loved it; I had to assure him that I had the recipe "saved". LOL
Using all listed seasonings (except salt) plus Old Bay, minced garlic, tumeric, and to the mix. I don't measure so can't help with the amounts. Followed STEP 1 & 2 using an iron skillet. Then, placed chops in the crockpot on high with tablespoonfuls of drippings and lime juice on top of each.
My STEP 3 included adding to skillet: a package of onion soup, tumeric, Greek seasoning, and 2c wild rice to the iron skillet, mixed together, browned (stirring occasionally) on medium heat apprx 5 minutes. Added, sweet peas (leftovers from fridge so this will be optional next time) and 4c water. Bring to boil, cover, cook until liquid is absorbed.
STEP 4--Remove chops; pour rice mixture and 1c water into crockpot; cover; reduce heat to warm until suppertime.
I added 1/2 cup minced bell peppers to the veggie ingredients. I also used 2T roux mix with the 2T flour since I has more veggies than this recipe.
PS. I used 1 can cream of mushroom soup + 1 can of water instead of fresh mushrooms~ only because my hubby isn't a fan~ I added it after the veggies heated in the flour/roux. Also, I cheated by using cooked shrimp so I added them at the end.
