We loved this soup. My husband actually went back for seconds. The only changes I made was I added mushrooms and 1/4 c. White rice. My tomatoes were home canned so I used them with their broth instead of chicken broth. Will make this again.
The seasonings are perfect as written. Like others, I did add the swiss chard stems and I had some mushrooms I needed to use so I added them. The soup was, to my surprise, very delicious! The seasonings and veggies gave off almost an earthy flavor. You do not miss there not being any meat in this whatsoever. Will make this again and again.
They were tasty but a bit dry. I'd definitely add a splash of milk or an egg to it next time just to moisten it. However, my family requested these again for special occasion dinners like Thanksgiving and Christmas.
I will be making this again. I did have a few changes that I made. I used reg. ground beef as I didn't have Sirloin. I used Italian bread crumbs instead of Panko. In the gravy mixture I added green bell peppers just for added flavor and to pack in more veggies. Husband loved it and said the meat was nice and tender. I served this over egg noodles.
