Working Mom's Moussaka

This hearty dish was one of my childhood favorites that my Mom's Macedonian heritage blessed and warmed our home with growing up in Toronto. It was a quick fix to keep us happy while balancing work.

Ingredients

  • 1 lb ground beef

  • 1-2 celery stalks chopped

  • 1 onion chopped

  • 4 cloves garlic minced

  • 2 medium potatoes

  • 2 Tbsp butter

  • 2 Tbsp oil

  • 1 small can Hunt's tomato sauce

  • 1 can stewed tomatoes

  • Salt and pepper to taste

  • Fresh oregano and thyme finely chopped

  • Asiago cheese (optional)

Directions

  1. Peel and chop potatoes into slices about 1/4"-1/2" thick. Put slices in a bowl of water for later.

  2. Over med-low heat, add the oil and butter to deep frying pan.

  3. Add minced garlic, and chopped onion and celery.

  4. Cook until soft and tender.

  5. Add ground beef.

  6. Cook until redness is out of the meat.

  7. Add stewed tomatoes first.

  8. Then add tomato sauce. (Only enough to cover the meat. Don't drown it)

  9. Season with salt and pepper to taste.

  10. Add potato slices in rows, standing them in the meaty mix like dominoes.

  11. Cover and cook another 30 minutes or so. The potatoes shouldn't take long.

  12. When the potato passes a fork test, remove from heat.

  13. Remove cover, sprinkle chopped thyme and oregano.

  14. Add shaved asiago if desired.

  15. Take a picture and enjoy!
