Excellent black bean soup with a good kick. The rice makes a great compliment as well. I feel like this is one I can tweak over time to my personal taste as well. There are so many options for veggies and spices!

Simple but very flavorful. And there's definitely things you can add to tweak to personal taste. Maybe could of used another can of tomatoes, but wasn't too sparse for my taste.

Great mix of veggies that has so many options to use what you have on hand. Delicious, and great to make ahead for meals during the week.
