I’m glad I found this one because I wasn’t 100% on the amounts.The main thing that’s different and that I would recommend is to mix the mayo, sugar (less) and the vinegar (way more - like 2-3 Tablespoons!) *before* mixing it into the broccoli and onion. Otherwise, you’ll be mixing for hours before the sugar dissolves. My mom’s recipe says to let the broccoli and onion marinate for at least 3-4 hours. I normally doing it the day before and then mix the bacon, raisins and cashews in at the last minute. That way they stay nice and crisp. I would have liked more seasoning and used the creole seasoning recipe here on Allrecipes, so not sure if a commercial mix would have been better. I could also probably use some fresher spices. But I'd make it again. Very easy and fast to make. Helpful (2) Easy Morning Glory Muffins 04/12/2011 YUM! I didn't add the coconut (ants somehow got into the bag. Don't you love spring?) and they STILL overflowed the muffin tins. You can easily make 14 or 15 of these. They were so delicious. Next time, I'm going to try making them with 1/2 wheat flour and 1/2 Splenda to make them a little healthier, but I'm definitely making them again. Thanks for a great recipe! I was a bit worried about the amount of butter (half a stick! more than any other BM recipe I've ever seen) but it turned out lovely, very rich and flavorful. I agree the poppy seeds didn't really add much other than prettiness. The loaf baked so high I could hardly get the handle of the pan over it to get it out of the machine, but cutting it in half before slicing it gave me a lovely 38 pieces of this, because it baked so high! Will keep this recipe in my recipe box because we love greek food and can see this easily going with everything from lamb to souvlaki to even gyros! Great recipe!
