Family Favorite Mac and Cheese II

This my version of mac and cheese, and it's a family favorite around here. Tons of cheesiness! I combined a few recipes into this one. I usually eye-ball the amounts of most of the ingredients.

Ingredients

  • 1 pound of elbow macaroni

  • 4 cups shredded cheddar cheese

  • 2 cups shredded colby jack

  • 2/3 cup grated parmesan

  • 2/3 cup cottage cheese (small curd)

  • 2/3 cup sour cream

  • 1/3 cup milk

  • 2 Tablespoons Dijon Mustard

  • Black Pepper to taste

Directions

  1. Preheat oven to 375.

  2. Lightly grease 9X13 pan.

  3. Boil Macaroni according to pkg and drain well.

  4. While macaroni is boiling, mix cottage cheese, sour cream and mustard (and pepper).

  5. Add parmesan to mixture.

  6. Add cheddar and colby jack.

  7. Stir - will be kind of dry. Add milk and stir.

  8. Add cooked macaroni when done and stir well.

  9. Pour into prepared pan.
