I have made this several times and although they may not look perfect with my impatient hand - they taste amazing. Always well received. I do add the graham crackers into the peanut butter mixture which I think takes it up a notch. I have a silicone mini cup cake tray - best thing ever - they pop right out. :) Thanks!
EDIT- You can reduce to 1 egg - I was doubling this recipe from my original to serve more people but realized the 2 eggs is probably a bit much - would be fine with 1 for those having trouble making balls out of them. It's hard in the beginning but they result in a moist meatball. :)Also, you can add more breadcrumbs to balance out the moistness if you are having trouble. AND I just noticed in the directions/ingredients, that oil is added to the mixture - I don't add any oil to this mixture - I only spray the baking sheet with oil. :S
I have made this several times and realized that I haven't reviewed it! Sorry! I love this dish. I do add some more seasoning because I am heavy handed with spices, so I will add chili powder, garlic powder & onion powder. They best part to this dish is crisping it up after. I also find, if I make a lot for left overs, I will reserve that portion after it has cooked in the liquid and put it in the fridge to be baked/broiled for that next meal - freshly crisp! Thanks!
I realized I never reviewed this but that's my picture currently on the main page! This was so good and so easy to make. It was dinner for one and just what I needed. I only changed the avocado oil for coconut oil since I had that on hand it would pair nicely. Oh and I likely added more sriracha because I love spicy food. Great recipe!!
So good! I cut back on the oil in the marinade because wherever I can cut oil I will cut oil. Also, whenever I attempt to grill fish it usually falls apart so I pan fried. Very tasty and spicy!
I added sharp cheddar and layered it. Oh my it was to die for. The sharp cheddar is a must in my opinion which is why I gave it 4 stars instead of 5. The parm on its own wouldn't give it the melt factor. However, a cute idea that has room for so much variation based on your cheese of choice.
Yum! I halved the recipe and cubed chicken breasts. Brown them at a high heat, and then removed them, added garlic and onions and then the puree sauce. Added the chicken back in to simmer for 15 minutes. So tasty! Thanks!
