Many recipes I’ve seen use a double boiler with precooked rice. The best way is too cool the rice in the milk. Don’t be shy about going a little longer than an hour but stir frequently! Scalded milk flavor is not good. I also like to add lemon peel to the simmer (remove before you cool the pudding). I don't bother with heavy cream; I have used unsweetened vanilla almond milk, evaporated milk, skim milk, and there is a little difference but not much. My favorite bread is the cinnamon swirl! The ratios for ingredients are near perfect as written and are easily halved, quartered, etc. I've made this a few times now, each time making some minor adjustments.
