The Original Chocolate Chip Cookie Cake Recipe.
Makes a super soft, cakey cookie bar. Because i have been baking chocolate chip cookies for decades, I knew it wouldn’t be the texture I like for cookies (I prefer chewy), but I was super curious to see how they turned out because it is the Tollhouse cookie recipe with extra eggs. These are puffy and light. Cutting into 24 is too large a piece for us. I ended up cutting into 60 for snack purposes. But this could be served on a plate ala mode for a celebration. When i have made cookie “cakes” for birthdays, I have just made my regular batch and baked half on a pizza pan with a lip. This is a fun variation though. Make sure to mix eggs in well. I baked 25 mins to be sure it would be set in the middle. Any longer would have been too long. If someone wants a chocolate chip cookie cake again, this is what i will bake and maybe drizzle with melted chocolate chips.

Buckeyes II
I made these for Christmas 2022 to rave reviews. This year I am too tired to do my usual baking so I asked my family what thing they wanted the most. These buckeyes were #1. If I can make nothing else, buckeyes are a must have. They are so good. I made the crumbs in the food processor and then added the other ingredients. I used natural peanut butter and they seemed too soft, but after dipping they were actually pretty amazing. I will probably use natural peanut butter again because they are a sort of soft bite inside the semi hardened chocolate shell. Divine

Caramel Sea Salt Dark Chocolate Coins
These are amazing and fast. Made these for Christmas 2022. I appreciated the video. It was just so easy and delicious. Nothing bad to say and no changes. I would say though, you can not turn your back on sugar on the heat. Just a teeny bit of patience will pay off. I can't wait to make them again this year.

Bread Machine Swedish Coffee Bread

My family loved this bread. It was 2/3 gone 20 minutes after taking out of oven. We could tell there was a spice added but it was very subtle. I may try again and add more cardamom. Also, I didn’t have pearl sugar and didn’t want to wait so I possibly went overboard sprinkling with granulated sugar! Hahaha. Pearl sugar is on the list for next time. Good recipe

Mexican Brownies

Amazing! Better the second day. If I were to make any changes, it would be slightly less cinnamon. But everyone loves these luscious, deep chocolate, slightly spicy, dense brownies. I have been looking for this recipe for a long time. It is very similar to ones my mom used to make. So excited to find!

Middle Eastern Rice with Black Beans and Chickpeas
5 stars because it was delicious and all my kids ate it up! I wanted didn't want to use meat, so I left out the turkey, but I am definitely making this again!
