I'm very glad I read the comments before trying this recipe. Made the changes suggested by naples34102 abd the cupcakes turned out great. I too, always cream butter and sugar and then add eggs when baking.

My mom made these many years ago.....and I started making them at Christmas, and putting them in Goody bags for my friends and family....they love them. The key is to not cut them until the next day.... in small pieces...very rich!
I made these with my two year old for Halloween. They were very quick and easy to make. I used 1 cup of chocolate chips and that was a perfect amount since this doesn't make a huge batch of cookies. I enjoyed the spice flavor and would consider using pumpkin pie spice instead of cinnamon next time. Yes, these are cakey, but all pumpkin cookies are cake like, but delicious. Perfect! I usually hate pumpkin pie, so I made this for Thanksgiving instead. I used a 1/2 teaspoon of pumpkin pie spice instead of the cinnamon, nutmeg, and cloves. I loved the flavor and texture of this cheesecake and how the pumpkin wasn't overpowering at all. I actualy made this the day before Thanksgiving, but we couldn't wait so we ate it today. This was sooooo yummy! I used a chocolate cookie crust and topped the pie with a drizzle of chocolate ganache and some salty peanuts. I made this for my mom's birthday and everbody loved it. Thanks for the great recipe!
These are so good and easy to make. Perfect for a Halloween party. I didn't srpinkle them with crumbs instead I drizzled melted white chocolate over the set chocolate dipped truffles, which made them very pretty. I used organic "oreos" instead.
I cut down the sugar to 1 1/2 cups and they were still very sweet. I didn't have any quick oats so I just used rolled oats and they turned out fine. I really liked how easy these were to make. Thanks for the great recipe!
This is an interesting recipe, I made a half recipe in a 8 by 8 inch pan and baked it for about 20 minutes. The batter was very very dry so I had to press in into the pan. They didnt taste bad the texture was just very granular. I would try these again if I needed to use of some zucchini, but next time im adding a little milk to the batter.
