October 2024 TCbaker reviewed Kim’s Chocolate Date Cookies. 04/21/2021 Everyone love these cookies! I made them according to the recipe, except that I made 30 smaller cookies out of the batch. At 15 minutes I removed the cookies because they seemed “set”. However, after they sat for a little while I tried to move one and it fell apart, was not completely baked. I put them back in for another five minutes. So I would suggest baking them longer, maybe the toothpick method would work? I won’t know until I try again. Putting cookies back in after they have been out for a little while is not some thing I would normally do; but, it worked and I don’t think it affected the quality of the cookies as our guests requested a copy of the recipe. I will definitely be making them again! Thank you for this alternative recipe to a high calorie cookie! I didn’t have mini marshmallow so I used 16 large marshmallows and melted them in the melted cup of butterscotch chips/stick of butter I had already melted slowly in the microwave. Be careful to heat added marshmallows in the microwave slowly & mix frequently until marshmallows are just melted. I then mixed the melted ingredients into the flour/egg batter, spread in glass 9x13 & baked for 32 minutes when center was set ( the center rises until it bakes through, then collapses and doesn’t jiggle). I ran a knife through-immediately after removing from oven. Did not taste until the following night. The only problem was that it was a little difficult to remove them from the glass pan I had prepared with Crisco. I would use parchment next time. Brownies were moist, chewy and flavorful, butterscotch was not overwhelming. I Would definitely make these again. I would also try and substitute a different flavored chip instead of butterscotch....mint or peanut butter. Baked in a cast iron pan for 25 minutes at 350 degrees. The quiche was moist and delicious. Also disappeared very quickly!
