We love chimichurri but usually have it with steak so this was a nice change. I used bone-in, skin-on chicken thighs and my own rub that I use for whole chickens. This was great and so full of flavor!

This is a good way to use eggplant. It needs more flavor though. I added some fresh minced garlic and lemon juice, but you can add any spices you like I’d imagine.

I love how these turned out! I omitted the egg and added some extra seasonings. I really liked the addition of onions and I plan on making these again soon. Thanks for sharing!

Super easy to whip up! I halved the recipe and used turkey sausage. I ended up having to finish it in the microwave because it wouldn’t set up, but it was still delicious! Great for an easy weekend brunch.

Really good recipe as a start off point for me. My technique was a little different, but tried to stay pretty true to the original post. I pan fried the chicken in a lot less oil than suggested and added some extra seasoning to the flour, egg and sauce to suit our tastes. I served it over cauliflower mash and roasted carrots with brussels sprouts. A great dinner!

This makes a great appetizer! I used fresh tomatoes and added some mushrooms. It was great for watching some football and a really nice change from the usual pizza.
