Pumpkin Spice Bread.
01/10/2012
Supremely moist and delicious. I used "spiced pumpkin butter" and substituted 1/2 of the sugar for Splenda Baking sugar for more spice and less calories.

Limehouse Chicken.
05/20/2011
Loved the flavors. Pounded boneless chicken breasts until even thickness and baked for only 20 minutes after they were well browned.
Made this for a dinner with my girlfriends and it was a hit. Cut the oregano at least in half (and that was still too much in my opinion), and added about 1/2 tsp ground cumin. I used two avacados and added the juice from a lime to the guacamole, and made smaller patties and put on slider buns. Yummy! It's a 5-star for me with these additions.

Banana Banana Bread.
04/13/2010
Mmmmm, MMmmm, MMmmmm. I used two very ripe bananas, one just ripe banana and added about 1/2 cup applesauce. I also substituted 1/2 the flour with wheat flour, added about 2/3 cup chopped walnuts, and sprinkled the top with brown sugar before baking. Very moist and delicious bread! Wishing I had added some of the mini Tollhouse morsels I had in the cupboard. Then my 2-year old REALLY would have dug it! Can't wait to try it toasted tomorrow morning...
