This smoothie was pretty good. I felt like it was missing something but I wasn’t sure what. I didn’t have graham crackers unfortunately, so that might’ve been it. It was quick and easy though.

Cajun-Spiced Popcorn.
I’ve made this twice now and it is my go to late night snack recipe. Minimal effort and very quick. I half everything and still have plenty for about five people. I only stuck it in the oven for about six or seven minutes (one cause I’m impatient and two I was afraid of burning it) and it tasted wonderful. Try this recipe. You will not regret anything.

These were delicious and made so many! I made a few tweaks for preference—added pecans instead of macadamia nuts and switched the amounts for the vanilla and almond extracts; turned out great! Be aware: they spread a lot in the oven, so probably don’t do more than six to a sheet. Also, they didn’t need the whole fifteen minutes, twelve was the sweet spot for me, but of course it varies with the oven. I will make sure I never lose this recipe!

I have kind of a funny story about making this. I’m a “ooh I wanna bake we have all the stuff let’s do it now” kinda baker. I found this fudge recipe and started making it. It took probably 30 minutes to get it to the right temp while simmering. I missed the part of the recipe where it had to cool for an hour. I had to leave in an hour to go to a movie with a friend. Then I had something else after that. It was SEVEN HOURS LATER when I finally added the last 2 ingredients. I stirred it the best I could for several minutes but it still looked very shiny. My family was waiting for me for dinner so I decided to finish stirring after. No joke: ten minutes later I came back to the saucepan and it had hardened completely. I hadn’t even put it in the pan yet. Anyway, it was good fudge. I’d make it again.
