I made it exactly as written and the cookies were excellent! As some have mentioned, the flour seems like a lot and it’s a feat of strength to fold in the chocolate chips! But my cookies did spread nicely on the pan but did not become flat at all, and the resulting consistency was very nice! It’s also hard to incorporate all of those chocolate chips but the cookies are very tasty with them! I thought the coffee flavor was great though I see many said it wasn’t enough. I didn’t taste the cardamom very distinctly but trust that it was in there contributing to the overall flavor. Mine took 14 minutes to bake. Overall I think this is an easy recipe that makes a lot of cookies that you can enjoy and give to people, too. I always like a recipe that makes plenty to share! I got 39 large cookies.

This dough was a bit challenging to work with as it broke/cracked easily. This recipe only made 10 cookies for me as I needed to leave the dough on the thicker side to keep it from cracking. I would agree with another reviewer who said they might try not chilling the dough at all next time. I love the aftertaste more than the cookie itself but I’m grateful for a vegan recipe!
I read that it could use a kick of more spice and that it was a bit dry, so I tried a few things. I used vanilla yogurt instead of the dry buttermilk and water, added a few spices like others have mentioned, and also cardamom. I also didn’t have wheat flour so used two cups of all purpose. It is a touch dry, but wonderful flavors! I’m interested in trying again but with applesauce instead of butter.
Excellent - I’ve been using vegan vanilla yogurt and it’s superb! I’ve been having for breakfast over and over! Thank you for the recipe!
