Great recipe. My second time making spam musubi. Brings me back to Hawaii! I used low sodium spam but should've used less soy sauce. It was a tad bit salty for me. Husband had it and really enjoyed it. I only used two sheets of nori and toasted it on the burner and cut into 1.5 inch strips with scissors. Like someone else mentioned, I used the spam container as my mold. Use Saran Wrap to line the mold then add rice. With a wet spoon, press down the rice. Pull the Saran Wrap out with the rice. Will definitely make again.

I added more sage and used fresh garlic in the sauce because our household loves the taste of garlic! Easy and quick recipe. I even added shrimp which I preseasoned with powdered garlic, pepper, and dried parsley. Great dish!

I had trouble using my kitchen aid mixer attachment (spaghetti) the first time around. Second time I took the advice of previous reviewers and used a bit of olive oil instead of water which made it easier for the dough to go through the machine. I cut up the dough into small 2 inch balls and plopped them into the mixer. Nice strands of spaghetti! I think next time I will try semolina flour since all purpose tastes a little dough-y to me. However, everyone else I served it to loved it.

Took the advice of others and coated cheese with flour and added lemon juice to pot after simmering the wine. Used cheap white wine and still tasted great. Dippers included polish sausage, mushrooms, French bread, red apples, and asparagus!
