08.03.17 ~ Another egg sandwich for breakfast, this week. This is pretty much how I make an egg sandwich, although I have never added mustard. I liked the mustard, but still prefer it with just the mayonnaise. Paired it with a couple of slices of cantaloupe and I was good until supper time.
08.01.17 ~ A nice taco salad with a great dressing to go with it. The taco salad was fine, but I wouldn't add celery or carrots the next time. I would add jalapeño slices, instead. But..........the dressing was outstanding. I will be making it again for other salad uses. I didn't have champagne vinegar so I used white wine vinegar and only about 1 1/2 TB of honey as I wanted the zing of the lime juice to shine. I did opt to use the shredded cheese. For the salad I would give a 4-star rating, but because we loved the dressing I'm giving the dish 5-stars.
08.01.17 ~ Simple and delicious. Read the recipe again and use common sense when preparing the egg mixture. For two eggs, you would never use a large red, large green and a whole onion. Dice and add the amount that works for you. I toasted sourdough bread and add sliced tomatoes and a piece of Romaine lettuce. Great breakfast sandwich.
07.30.17 ~ Just picked our first round of jalapeños from the garden. I whipped up a small batch of the cheese mixture and stuffed it in 10 halves. Popped them in the toaster oven and 15 minutes later had a delicious side to go with our corn on the cob and fresh fruit. Super simple to make and a nice way to use up some jalapeños. I did wear gloves to handle the peppers while cleaning and stuffing them. So glad I did as two of them were particularly (spicy) hot. Like grab your glass of milk spicy!
07.29.17 ~ A very flavorful rice to serve with pork. I did make two adjustments since I was making this early and going to reheat at dinner time. I doubled the recipe using 2 cups of water and 2 cups of pineapple juice. I also finely chopped a fresh pineapple in place of canned and threw in some diced orange pepper that was in the fridge. I waited until I reheated it to add the lime juice, cilantro and green onions. Served this with 'Grilled Pork Tenderloin' from AR. Took this meal to my parents and everyone really their dinner.
07.29.17 ~ Pork really doesn't get much easier than this recipe. I had a large tenderloin in the freezer that I cut in to two pieces. We add the s/p and garlic powder about one hour before grilling. My husband grilled exactly as directed with the heat and length of time - and it was perfect! Served this with 'Pineapple- Lime Rice' from AR. Took this meal to my parents and grilled out there. Everyone really enjoyed our dinner.
