While I didn't make the recipe exactly, I did use the technique for salting/prepping the eggplant. Both my husband and I agreed it was hands-down, the best eggplant I've ever made.

I followed the recipe exactly (which I always do the first time I bake something), and the cake was way too sweet. If I try it again, I'll probably cut the sugar in half.
Even though I lightened the recipe (used 1 T olive oil instead of the butter; 1% milk; non-fat plain yogurt instead of the sour cream), it tasted rich and wonderful. I'll absolutely be making this again.
Delish! I made half a recipe (using 1 oz of egg), and I added some raisins. As the name promises, it's amazingly easy to make, and I don't know that I'll ever buy Irish Soda Bread again.
These were phenomenal. I was making a double batch and ran out of sugar, so I used about 1/4 cup less than the recipe called for. I don't think it was missed.
