I’ve made this recipe a few times and everyone who has had it raved about it! I usually make it for my family/coworkers so I double the batch and use a 50oz can of cream of mushroom instead of four smaller cans of cream of mushroom and cream of celery and it turns out perfect. I also don’t defrost the tater tots and just mix them in frozen. I like that this recipe doesn’t call for mixed vegetables because most of the people I cook for are picky and don’t like the taste/texture of mushy cooked vegetables in hot dish, besides the onion, of course. The crunchy fried onions really top it off nicely. I place foil over the pan for the first 45 minutes in the oven and then remove it for the last 15 minutes so the fried onions get crispy and browned but not burnt. This will definitely be a staple in my recipe box!
I made this as a treat for my birthday, but I think it will be making it many more times in the future! It was delicious! Mine turned out a bit flat - kind of like a slightly puffy crepe - but I didn't realize it was supposed to be fluffy and thought it was great anyway. I'll probably try a few of the suggestions in the reviews next time and see if I get a different result. I ate it with a little powdered sugar and some maple syrup, but I think it would be amazing with fruit or berries.
Very good and moist banana bread. I made it without the walnuts since I didn't have any on hand and I was also a 1/4 cup short of honey so I substituted the remaining 1/4 cup with agave nectar. It turned out great! Not only is it healthier due to being made with whole wheat flour and no white sugar, but it is also more filling. I will certainly be making this again!
