Babadua

This recipe originated in Chile, and was given to our family by the mother of our exchange student, Carolina.

Ingredients

  • 1 can evaporated milk, chilled

  • 1 3-oz package Jello (the flavor should complement your fruit, if used)

  • 1 cup boiling water

  • Fruit of choice

Directions

  1. Boil water

  2. Dissolve Jello in the boiling water

  3. Whip milk with a mixer until thick. If the evaporated milk is not very cold it will not get thick.

  4. Slowly pour Jello mix into the milk until well mixed. I find if the Jello is not allowed to cool slightly it will "unthicken" the milk.

  5. Put in dessert bowls and add fresh or frozen fruit

  6. You can eat immediately or refrigerate and eat later as a cooler dessert or snack

  7. If refrigerate, cover or the top will dry and the texture changes as well as not looking as palatable

Cook’s Note

  • If using sugar free Jello and regular can of evaporated milk, 1/10 a serving (a soup ladle or about 5/8 cup) is 52 calories, 4 Carbs, 4 g sugar, 3 g protein, and 2 g fat If I'm using fruit, I typically put a layer on the bottom of the dish and decorate the top either by putting a piece on the side of the bowl (like a slice of lemon on a water glass) or laying it on the top. Use your creativity.
