Peach Cobbler in the cast iron fryer pan - deep pan, so I tripled the recipe for the peach filling and doubled the topping recipe.
Delicious! Yes, I will make this again. I'm thinking peaches and blueberry combo next time.
What I did differently was I used canned peaches, and instead of using boiled water for the topping, I used peach juice from the peaches. (boiled it - I believe instead of 1/4 cup like what is called for in the water; it took closer to 1/2 cup of peach juice
I followed the advice of Chef Joy and pulled them from oven at 8 minutes. I let them sit for a few minutes on pan before transferring to wire rack. For the sugar coating; I mixed 3 Tbsp sugar and 2 1/2 tsp cinnamon (Chef Joy's tip) and this was just enough. These freeze well also; I made the balls, rolled in the sugar, put on a dish in the freezer for about 15 minutes and then dropped the balls in to a ziplock bag with the name; oven temp and time Now I can bake a few at a time for the family
This is perfect! I followed directions - I used beer in the crock - took ribs out at 2.5 hr mark - put on cookie sheet and brushed barbecue sauce on - baked for 15 min. Fell off the bone! This is a keeper!
I made a spaghetti squash side for this which was perfect for this dish
