I had a craving for homemade cookies but did not have eggs or enough butter. I found this recipe and decided to give it a try. I don't like really sweet cookies so I used half white and half brown sugar and I used baking powder instead of baking soda. I also used a generic mayonnaise that has a milder flavor than some others. These cookies don't really flatten as they bake so pressing them flat is crucial for crispy cookies. This is a basic sugar cookie recipe that lends itself to additions. I have experimented, sometimes adding 1 cup of chocolate chips and nuts, sometimes adding 1 cup of oatmeal and raisins. Very quick and so easy to whip up a batch. Thanks!
After playing with this I found that by removing the cover 10-15 minutes before being done and raising the oven temp (or not depending...) allows the sugars to caramelize nicely and enriching the flavors. Or you could just pop it under a broiler. I think it makes it even better.
This was good, a big hit. Next time I think I will play with the amount of marmalade I add. It mellowed overnight in the fridge and continued to do so until it was gone. But,it was even better after we added 3 tablespoons of liquor. I put some on a bagel with cream cheese for a snack. I will be making this for Christmas and Easter as well. Thanks for the recipe.
I had 'this' recipe before, but lost it. so, I was very happy to find it here. I roll the cookies in confectioners sugar once a few minutes after removing from the oven, then a second time after they have cooled.
I am from the south and I love boiled peanuts. I have found that using a crock pot for boiling peanuts is great. It helps retain more of the water (you may still need to add a little). But you can just set it and only have check on it every hour or so.
