Chicken, Veggie, Rice Casserole

Ingredients

  • 2-3 chicken breasts

  • 3/4 cup sprouted & wild rice

  • 3/4 cup white rice

  • 1 1/2 cups water

  • 2-3 carrots, peeled and sliced julienne style

  • 1 bell pepper (orange, red, yellow, cut in chunks

  • 1/2 onion sliced

  • 1 head broccoli, chopped in bite-size pieces

  • 2 tsp minced garlic

  • 1 jar quality alfredo sauce

  • 1 tsp dried cilantro

  • pepper to taste

Directions

  1. Bring water to boil, add rice, cover & simmer for 25-30 minutes.

  2. Cook chicken until cooked 1/2 through, then slice.

  3. Put chicken back in pan, add carrots & cook until almost tender, then add remaining veggies & garlic.

  4. Add alfredo sauce & spice and stir together, let simmer. Either combine rice & chicken/veggies together & serve as casserole, or serve separately.
