Chicken, Veggie, Rice Casserole Be the first to rate & review! whole family loved this! :) Submitted by tanroc Published on April 20, 2013 Save Rate Print Share Prep Time: 20 mins Cook Time: 30 mins Total Time: 50 mins Servings: 6 Yield: 4 to 6 - servings Cook Mode (Keep screen awake) Ingredients 2-3 chicken breasts 3/4 cup sprouted & wild rice 3/4 cup white rice 1 1/2 cups water 2-3 carrots, peeled and sliced julienne style 1 bell pepper (orange, red, yellow, cut in chunks 1/2 onion sliced 1 head broccoli, chopped in bite-size pieces 2 tsp minced garlic 1 jar quality alfredo sauce 1 tsp dried cilantro pepper to taste Directions Bring water to boil, add rice, cover & simmer for 25-30 minutes. Cook chicken until cooked 1/2 through, then slice. Put chicken back in pan, add carrots & cook until almost tender, then add remaining veggies & garlic. Add alfredo sauce & spice and stir together, let simmer. Either combine rice & chicken/veggies together & serve as casserole, or serve separately. I Made It Print
