Changes: 1 butternut squash, not two, no basil, and I used chunky garden spaghetti sauce, so extra veggies. Reviews: me (36 yr old healthy woman): loved it. I had 3 servings, and got full without the carbs of the noodles. husband: said he missed the carbs from the noodles, and wanted carbs after dinner. He said without noodles there was too much meat sauce. Maybe the second squash would have helped with the meat issue. kids: none of them liked the squash. I would make this again, but with noodles. In fact, I tried both ways with quinoa, black beans, and corn for the dinner cake, and the breakfast cake with the sour cream/maple syrup. The dinner cake was better. I think it was the variety of root vegetable flavors with the perfect seasonings. I used red potatoes with skin on, yams, sweet potatoes, carrots, and onion for the vegetables. I also added cooked ground hamburger and melted cheese on the top at the end. I did these two things to make it more kid friendly, but it would have been just as good without the hamburger and cheese. The rosemary and garlic were spot on. Yummy!! I didn't have vanilla left, so I put in a little vanilla protein powder. Perfect little tray when I am craving peanut butter.
