1 1/2 cups flour

3 1/2 teaspoons baking powder

1/4 teaspoon salt

2 tablespoons honey

3 tablespoons oil

1 egg

1 1/2 cups milk

2 tsp vanilla

Oil for frying
Directions

Melt oil and honey in a small microwavable container for 20 seconds.

Sift flour and baking powder into a large bowl,stir in salt. Make a well in the centre of dry mixture and add in melted oil and honey, egg, vanilla and milk; whisk until combined.

Let batter rest for 5 minutes. Preheat a large skillet over medium heat.

Add 1 tsp of oil to the pan. Pour batter into the hot skillet, about 1/4 cup of batter for each pancake. Add more oil as required. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake and its golden brown. Flip and cook other side until golden, about 1 to 2 minutes.
