Loved this! I was looking for something without soya sauce and this recipe has a lovely flavour. I used a regular red onion, and since I was estimating the maple syrup, I ended up using about a tablespoon more than what was called for. I’m making it again for sure.
It would have been better with more salt. My family said chicken was a little bland. Next time I will add salt to taste and skip on maple syrup. My family preferred regular pancake syrup. My husband said maple syrup did not taste good on the chicken and wanted regular syrup. Because Im the only one in my family who doesn’t eat meat, I used extra firm tofu in place of chicken and the batter was too bland even for me. This took a bit of time because I made waffles with waffle iron (bisquick).
Excellent recipe! I only omitted the cayenne pepper so it wouldn't be too spicy, and it turned out perfect for my tastes. I used a thinly sliced chuck steak and made this in my instapot and the meat was fall-apart-tender after just 40 minutes on the meat setting. I also garnished with Mexican cheese and a dollop of sour cream. The fresh pico de gallo and shredded cabbage were a nice upgrade from lettuce and salsa. Will make again soon!
